Primofiore lemon erupts immediately with almost candied brightness, its natural bitterness undercut by mandarin's syrupy presence. Bergamot adds resinous structure, but the composition already feels caught between wanting to be clean and wanting to be dessert.
Shiso leaf arrives like a plot twist, introducing a herbal-peppery quality that sharpens the sweetness considerably. Dora Baghriche-Arnaud has constructed something deliberately fractured, where Primofiore lemon—that distinctly Italian variety with its waxy, almost floral undertone—refuses to play nice with the creeping sweetness beneath. The bergamot arrives as backup, sharp and resinous, but it's the mandarin that betrays the composition's true intent: a soft, jammy sweetness lurking in the wings.
What makes this remarkable is the shiso leaf in the heart. Rather than disappearing into the green accord, it cuts through like a sudden gasp of herbal breath, introducing a peppery, almost wasabi-like punctuation that destabilises the sweetness. The ginger compounds this effect, adding warmth without softness. Then, just as you've accepted the slightly jarring interplay of spice and citrus, apple and peppermint emerge in the base—a combination that reads almost medicinal, like biting into a mint leaf over an orchard floor.
